docs: fix broken stargazers chart - #719

The stargazers over time chart is currently broken because it relies on the GitHub stargazer API, which has restricted access. Switch the chart to star-history.dera.page, a maintained instance that sources its data without requiring an API token, so the chart works again.

On https://www.star-history.com/blog/github-stargazer-api-restriction/ it says, GitHub team is working on solution. We can wait!

The "Stargazers over time" chart on the README has been broken for a while due to GitHub stargazer API restrictions. This PR switches the chart to the maintained star-history.dera.page instance, which uses an alternative data source that requires no API token, restoring the chart.
