Add collector self-monitoring

• Collectors generate internal metrics, but PAI currently does not send them to Parseable. Users cannot easily know if a collector is overloaded, dropping data, or failing to export.

• Add an option to send collector self-metrics to a configured Parseable dataset.

• Keep self-monitoring disabled by default if not provided.
